Chapter Four · Meat preparation

Cooking the bird

The most important principle when cooking a small bird is:

Do not apply direct heat to the breast until the very end.

The breast is extremely easy to overcook. Direct heat should primarily be applied to the bottom of the bird, the thighs and the bones, while the breast is brought gently toward its final temperature.

Controlled cooking

There are several ways to gently bring the bird to temperature:

  • Low-temperature oven
  • Oil confit bath
  • Sous vide
  • Gentle cooking in a pan

The method is less important than the principle: slowly bring the center of the breast to the desired temperature without exposing it to aggressive direct heat.

Once the desired internal temperature is reached, the bird can be finished with direct heat. This final step should be extremely fast — only a few seconds. The purpose is to develop color, crisp the skin and create the final texture without significantly raising the internal temperature of the breast.
